2 cups broccoli spears (I used frozen)
Red peppers – to taste
Mushrooms – to taste
Onions – to taste
2 Cups reduced fat cheese (max 6gs fat)
Your Favorite seasonings
Stir all ingredients together in a bowl, do not scramble the eggs, and season to taste. Use only 1 cup of cheese in the mixture and sprinkle 1 cup on top. Spray baking dish with non-stick cooking spray. Pour mixture in pan and bake, 350 degrees, for 25-30 minutes. Let cool and serve with your favorite salsa on the side. Voila! Good healthy Eating!!
